The blend

Tempranillo (85%) and Grenache (15%)

The Tempranillo/Grenache blend is very common and complements each other in terms of color and flavors.
“In making wine, it is of the utmost importance to choose the most representative and high-quality grapes in the region and especially good vintages” – Doron Yitzhak-Yinan.

In Spain there are 600 grape varieties of which 15 make up 75% of the cultivated area.

At the top of the list is Temperano.

The Tempranillo grape – forms the backbone of the Spanish wine world. Spain’s second most famous red grape is the Grenache.

 

the making process

The grapes were harvested in a selective manual harvest from vineyards over 50 years old, growing without irrigation in the “Karnina” area, using the “Bush Wine” method.

Immediately after crushing, cold maceration was carried out for four days and then normal fermentation with cultured yeast. At the end of fermentation – continue soaking on skins for 15 days before making the “prize”.

The wine underwent full malolactic fermentation, before entering the barrels, most of which are new (mixed American and French).

The wine has been in barrels for over two years. After this extended period of residence, the wine was blended and returned to the barrel for another period of several months before bottling without filtering.

The growing conditions of Temperano grapes:

Tempranillo grapes: dark and thick-skinned and therefore produce dark-deep-colored wines with a bluish or red hue.

Growing conditions: deep soil, sandy loam and well-drained slopes. Needs about 450 mm of rain per year. Ripens at the end of September – among the first varieties to ripen (about two weeks before the other varieties in the same region).

Grenache grapes: the most widely planted grape in Spain and best suited to a hot, dry climate, rocky soil, well-drained slopes, very suitable for the Mediterranean regions. The variety is mostly found in blends and less as varietal wine.

The vine trunk is very strong and withstands the strong winds that blow in the vineyards. The vines begin to ripen early, but need a long time to reach a good ripening.

When grown correctly and while controlling growth and controlling the amount of fruit – powerful color tends to deep purple or red-white (must control the yield of the vineyard)

In our winery, we do not exceed 500 kg per acre. A low yield indicates high quality.

The thinning method in growing the vine is very fundamental to obtain a high quality of the grape, it is also related to growth therefore it is important to keep the vine restrained.
